About the Book
After a Crohn’s disease diagnosis at age 28 and more than a decade of unsuccessful traditional treatment, Emily Maxson discovered the positive effects of the Specific Carbohydrate Diet (SCD), a nutrition-focused treatment for autoimmune and digestive disorders. A trained chef, Emily poured her heart into creating delectable dishes that met the diet’s rigorous guidelines, which eliminate non-essential carbs known to cause inflammation. After following the plan for 18 months, she felt better physically, mentally and emotionally. This way of eating, coupled with her faith in God, gave Emily newfound hope for the future. She began supporting others in discovering the transformative power of food to improve health. In 2010, she launched an online platform to share her experience and expertise. She became a certified health coach and created a raw detox business. It all evolved into her current platform, Emily’s Fresh Kitchen, which has grown into an engaged community of more than 15,000.
Emily believes preparing food at home is one of the best ways to impact your health. And it doesn’t have to be complicated. “Emily’s Fresh Kitchen: Cook Your Way to Better Health” features dozens of delicious and approachable recipes the whole family will love. Most are gluten-, grain- and dairy-free, but some include more standard ingredients. Many follow the SCD guidelines. The majority are adaptable to different dietary needs. The spotlight is on fresh, whole foods. With more than 100 recipes across all categories—salads, main dishes, soups and sides, breakfasts and smoothies, appetizers and savory snacks, sweets and treats, drinks and cocktails, and more—“Emily’s Fresh Kitchen” cookbook is a great starting point for cooking your way to better health.
